London Fog Popsicles

Though summer is coming to an end, these London Fog popsicles will keep the good vibes going. A frozen twist on the classic London Fog drink, they’re the perfect way to cool down and relax anytime! This super easy recipe can be made for a single serving or multiple—ideal for any occasion!


Ingredients

(Serving size: 1 popsicle)

  • 2 tablespoons earl grey tea (or 2 teabags)

  • 4.oz boiling water 

  • 1 tbsp Honey 

  • 2 oz. Coconut cream/ heavy cream

  • A popsicle mold or a small jar/ cup (~6oz.) 

  • A popsicle stick (ie. metal spoon or fork)

Recipe Time

Preparation time: 7 minutes

Freeze time: 6 hours

For Multiple Servings

Multiply the ingredient amounts based on the number of servings you want to make. If popsicle molds aren't available, you can use a muffin tin or ice cube trays instead. Remember, the ratio of Earl Grey tea concentrate to cream should be 2:1.


Recipe

Step 1:

Start by making an Earl Grey tea concentrate by pouring about 4 oz of boiling water over 2 tea bags (or 2 tablespoons of loose-leaf tea). For our Earl Grey tea, we're using Rishi, the same brand featured in our café. Let it steep for 5 minutes.

Step 2:

Add 2 tablespoons of honey to the mixture and stir. (For a sweeter twist on this popsicle, try swapping the honey for our house-made Bourbon Vanilla syrup!)

Step 3:

Pour the tea and honey concentrate into your mold (or other 6oz container).

Step 4:

Add 2 oz. of coconut cream (or heavy cream) and gently swirl. Insert your popsicle stick and mix until the concentrate and cream are fairly homogeneous.

Step 5:

Cover the top of the mold. If you're using a jar or another container without a lid, place a piece of aluminum foil or plastic wrap over the top, puncturing a small hole for the popsicle stick to fit through. This will help keep the popsicle stick securely in place.

Step 6:

Place the mold in the freezer overnight or for at least 6 hours. Once frozen, run the outside of the mold under hot water to help loosen the popsicle. Then, enjoy!
