Spring Drink Menu 2026

Spring is finally here, and so is our long-awaited seasonal lineup. With a mix of café exclusives and returning favorites like the Ube Latte, Main Squeeze, and Dirty Horchata, there’s something for everyone to enjoy this season. As always, making room for new, café-specific creations means making a few tough cuts, but we couldn’t be more excited about what each team has dreamed up. We can’t wait for you to try the three returning favorites and all the fresh, fun flavors each café is bringing to the lineup this spring.

💜 The Ube Latte

Our take on the award winning, cult classic Ube Donut from our friends at Gurnee Donuts. Ube is a purple root  vegetable that tastes like a vanilla wafer cookie. Trust us, it’s delicious! Made with espresso, Ube syrup, sweetened condensed milk, coconut milk, and milk. Oddly enough, it pairs well with its pastry counterpart!

🍋 main Squeeze

Long story short, this is definitely not your average lemonade stand lemonade. We’ve elevated ours with strawberry-basil syrup, sparkling water, Angostura bitters, and basil leaf garnish. You’re going to love these fresh spring flavors!

🥛 Dirty Horchata

Everyone has their favorite taqueria, but unlike your loyalty, this drink shows no partiality and pairs well with them all. This delicious iced drink is made with rice milk, brown sugar, vanilla and almond extracts, cinnamon, and cold brew concentrate. So good, you’ll find yourself drinking these all time with or without tacos.

At Libertyville, we’re pouring the Carrot Cake Latte — a spiced, cozy take on the classic. Made with carefully crafted espresso, carrot juice, brown sugar, nutmeg, cinnamon, vanilla, walnut, and steamed milk.

We often have discussions and ideas for seasonal specialty lattes that revolve around the desserts associated with that season. For Spring, it was almost unanimous in the decision to feature a Carrot Cake Latte. Elevating beloved flavors like nutmeg and cinnamon, while playing with carrot juice and cake flavors, gave us a deliciously sweet latte that we’re delighted to share with our customers. Hot or iced, it is the perfect way to usher in the unpredictable Midwest spring.”

At Winnetka, meet the Chantala Matcha — made of matcha, vanilla, and steamed milk, topped with a blueberry & strawberry pea powder whipped cream and dried raspberries. It’s light, layered, and just the right amount of indulgent.

“The Winnetka cafe has been patiently awaiting the arrival of unsweetened matcha in our cafe, and we knew that our cafe's exclusive would need to include this new recipe. We were inspired by the Whole Foods Chantilly cake for its fruity-vanilla flavor that we think pairs perfectly with our new matcha recipe. It truly captures the essence of spring.”

At Highwood, try this Peach Cold Brew Lemonade, dubbed the Peachy Bean — a crisp combo of cold brew, lemonade, peach syrup, and peach bitters. It's unique, refreshing, and made for sunny days.
