Mastercol: Huila, Colombia

Introducing Mastercol Yellow Bourbon: A Fruit-Forward Natural from Huila, Colombia

We’re beyond thrilled to share our most exciting Colombia releases to date: Mastercol. This is a small but mighty lot—a natural-processed, single-varietal coffee sourced from just ten smallholder farmers across La Argentina, Oporapa, and San Agustín in Huila. It's a rare find, a dazzling combination of history, technique, and varietal, and we only have a small amount, so consider this your heads-up not to wait on trying this vibrant new coffee.

Huilas Rich history and volcanic edge

This coffee is special for many reasons. Not only does this coffee embody its regional history and the dynamic folklore that surrounds it, but the story behind this coffee spans much farther than what meets the eye. Coffee from Huila has become synonymous with quality over the past several years, and part of that is thanks to the region’s rich volcanic soil. Though the last eruption of Volcano Tolima happened over 4,000 years ago, its soil remains incredibly rich and nutrient-dense, particularly in elements like potassium, nitrogen, and the all-important boron, which plays a key role in plant growth and fruit production. Combined with Huila’s high altitudes, balanced rainfall, and skilled, dedicated farmers, you’ve got a recipe for truly exceptional coffee.

What makes this lot so unique compared to its counterparts is that this lot consists entirely of the elusive Yellow Bourbon Varietal. Yellow Bourbon is historically celebrated for its natural sweetness and bright, clean acidity—but in this case, it’s been naturally processed, giving the coffee a deeper, fruitier flavor profile. After careful handpicking, these coffee cherries are dried slowly on patios and solar dryers over 30–35 days, allowing sugars to fully concentrate. The result? A rewardingly delicious cup that is bursting with a rush of tropical, juicy intensity—kiwi, blueberry, and grape candy. It’s sweet, punchy, and lingers with a syrupy, vibrant finish. One sip in and you’ll understand why it’ll make you say, “Oh, this one is fun”.

From the Roots of Colombian Coffee

Colombia has a deep and storied relationship with coffee, one that’s said to have begun with priests who grew the crop for barter and personal use. One particular tale speaks of Father Francisco Romero, who famously gave out penance in the form of planting coffee trees. Whether legend or fact, what’s clear is that coffee quickly became embedded in Colombia’s agricultural heart, and Huila remains one of its best-performing, brightest stars.

A stand-out Lot

Fresh Colombian harvests have been trickling in as their season begins to peak, but this one very clearly stands out from the crowd. It’s not just a delicious coffee—it’s a celebration of regional character, varietal specificity, and the unique side of natural processing, especially when it meets a traditionally bright varietal. This is a coffee to savor slowly, share with friends, and relish due to its limited release and small quantity. Don’t miss out

Try it while you can—you won’t want to miss this vibrant, juicy gem from Mastercol.
