An intriguingly effervescent & velvety coffee that truly sparkles

One of the most fun parts of selecting coffees to buy, roast, and offer for us is getting to taste many coffees back-to-back, blindly, and compare them to each other. This process allows the best coffees to truly rise above the rest, and ultimately, these are the ones we choose to bring in and put our name behind. This coffee, from the San Diego Mill in Tarrazú, Costa Rica, is one of those standouts. On a table with 12 other coffees from Costa Rica, this one was undeniably the most fun, special, and delicious of the bunch. This coffee's unique flavor experience is the result of forward thinking and experimentation in its process, or fermentation of the coffee cherries. It was processed with an "anaerobic lactic fermentation" where the coffee cherries ferment and soften in tanks devoid of oxygen and water. As this happens, high sugar content in the super ripe cherries gets transformed into lactic acid which leads to uniquely sweetness, effervescence, and creaminess. As a result of all this we tasted things like sparkling cherry cola, fruity hibiscus, and sweetened, velvety cream.
