Big Juice is here, and it’s exactly what it sounds like: loud, juicy, sunshine-in-a-cup energy built for the start of summer. This is our first seasonal blend designed specifically around fruit-forward intensity, layered fermentation, and pure fruity, seasonal joy. It brings together two incredibly dynamic coffees to create something that feels playful, vibrant, and made for long iced coffee days — we hope you love it as much as we do!
The Blend
Big Juice is a pairing of a naturally processed Ethiopian coffee and a Colombian passionfruit co-ferment. The Ethiopian natural brings structure, clarity, and a sparkling fruit backbone. Think lifted aromatics, juicy acidity, and a clean, syrupy sweetness that keeps everything feeling bright and defined.
On the other side, the Colombian co-ferment pushes things into more experimental territory, layering in tropical intensity and rounded sweetness through controlled fermentation with passionfruit and selected yeast strains. Together, they don’t just complement each other, they expand each other, building a cup that feels both precise and wildly expressive.
The result is a blend that’s dialed in, fruit-forward, and built for summer energy.
The Co-Ferment Process
The Colombian coffee begins with careful hand selection, where only fully ripe cherries are chosen to ensure sweetness and clarity from the start. After sorting, the cherries undergo a short pre-fermentation stage, followed by fermentation in the cherry to begin developing complexity before depulping.
Once depulped, the coffee enters an anaerobic fermentation phase with its mucilage intact. During this stage, passionfruit influence is introduced alongside carefully selected yeast strains that guide fermentation and enhance fruit expression. These controlled conditions help intensify tropical aromatics while building layered sweetness and depth without losing structure.
After fermentation, the coffee is mechanically dried over an extended period to ensure even moisture reduction and consistency, then stabilized in GrainPro bags to rest and integrate. The process is precise and intentionally designed to amplify fruit character while maintaining balance and clarity.
The Cup Profile
Big Juice opens loud with immediate passionfruit: it’s bright, tropical, and intensely juicy. As it cools, it shifts into soft peach nectar sweetness and rounded citrus tones that add lift and structure.
