La Argentina & Pitalito: Huila, Colombia
Origins
Nestled in the lush mountains of southern Colombia, Pitalito in Huila has become one of the country’s most renowned coffee-growing hubs. At the heart of this region lies La Argentina, a high-altitude microclimate where rich volcanic soils, consistent rainfall, and dramatic daily temperature swings create ideal conditions for producing complex, vibrant coffees. Huila’s reputation as a powerhouse of Colombian specialty coffee is well earned, and La Argentina exemplifies the precision and dedication that growers in this region bring to their craft.
The Farms and Cultivars
Producers in La Argentina cultivate a mix of classic Colombian varieties such as Caturra, Castillo, and Pink Bourbon, each thriving in the region’s unique terroir. While Castillo is known for its resilience, Pink Bourbon and Caturra excel in quality, offering sweetness, balance, and delicate, fruit-driven flavors. Farms here are typically small, family-run operations, where coffee is both livelihood and tradition, passed down through generations.
Processing Method
Like much of Huila, the coffees from La Argentina and Pitalito is a washed-processed coffee, a method that has become a hallmark of Colombian production. After careful handpicking, often with the help of family members and neighbors, ripe cherries are sorted through to ensure quality. They are then depulped and fermented in tanks for an average of 24 to 48 hour. Following fermentation, the coffee is washed clean and dried slowly on raised beds or dryers, often under the careful watch of the producers. This meticulous attention to detail ensures clarity and consistency in the final cup.
