Mastercol – Terra is our first fresh-crop coffee of the new year from Huila, Colombia, arriving after an exceptional run of standout Huila lots throughout 2025. It immediately caught our attention as a double-fermented, single-varietal Caturra from Mastercol—one of our most trusted producer groups and long-term partners since 2017. This is a coffee that feels both familiar and exciting, building on everything we love about the region while offering a renewed sense of vibrancy.

Origin & Growing Conditions

Southern Huila is defined by steep, mountainous terrain, fertile volcanic soils, and elevations that reach up to 2,000 meters above sea level. Combined with strong solar radiation during the day and cool nighttime temperatures, these conditions create an ideal environment for producing high-quality coffee with brightness, sweetness, and structure. Small-scale producers across the region focus on meticulous harvesting and processing, helping solidify Huila’s reputation as one of Colombia’s most celebrated coffee origins.

Double Fermentation Process

What sets Terra apart is its double fermentation process, designed to enhance clarity rather than overpower the coffee. After hand-harvesting and flotation, the cherries undergo a carefully controlled initial fermentation. The coffee is then depulped and fermented a second time, with constant monitoring to ensure even development. This layered approach refines acidity, sharpens fruit definition, and brings a polished vibrancy to the final cup. After fermentation, the coffee is fully washed and sun-dried on raised beds and patios to preserve freshness and stability.

From the first sip, Terra reminded us of last year’s favorite, La Victoria. Expect a juicy spectrum of ripe red fruits—cherry, strawberry, raspberry, and blackberry, balanced by a standout peachy stone fruit note. The cup is clean, expressive, and lively, offering remarkable clarity and sweetness at a refreshingly approachable price point.

This lot represents the work of producers like Roberto Muñoz, a third-generation coffee grower from Saladoblanco, Huila. Alongside his family, Roberto embodies Mastercol’s commitment to quality, sustainability, and long-term community development. Through consistent excellence and a focus on training younger generations, Mastercol continues to invest in a future where specialty coffee remains both viable and meaningful for producers.
